DIRECTIONS

  1. BOIL 4 cups of water in a large saucepan. Stir in SPLENDA® Granulated Sweetener and rice. Cover, reduce heat to low, and simmer for 20 minutes. Set aside.

  2. HEAT oil in a stock pot. Add corn, tomatoes, and peppers and sauté until soft. Add chicken stock, seasonings and shrimp. Allow liquid to reduce and shrimp to cook until pink, about 10 minutes.

  3. STIR in scallions and yogurt. Serve stew over rice.

NOTE

Serving size: ½ cup rice and about 3 shrimp

  • 2 cups long grain rice
  • 1 tablespoon olive oil
  • 1 16 oz. bag frozen corn
  • 4 each chopped Roma tomatoes
  • 1/2 chopped red bell pepper
  • 1 cup chicken stock
  • 2 teaspoons Creole seasoning
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne
  • 1 16 oz. bag 31-40 count frozen, uncooked shrimp
  • 1 cup sliced scallions
  • 2/3 cup nonfat Greek yogurt
